Iowa Beef Tenderness Project
Imagine having a guarantee that the next steak you purchase will be the tenderest you've ever experienced. And a guarantee for every steak you buy after that.
This theoretical situation may come true someday, especially with the implementation of new technologies being utilized at Iowa State University's Iowa Beef Center.
The Iowa Beef Tenderness Project, which began in 2000, seeks to identify which sires produce offspring that are highly desireable in tenderness. Prior to 2000, Iowa producers did not have the opportunity to conduct a genetic evaluation of this kind on their own cattle. The Iowa Beef Center was given that chance, though.
